Featured Seasonal Recipe

Asparagus Risotto

This recipe is extremely versatile. You can change the vegetables, add your favorite fresh herbs, or add 1 cup of your favorite cheese at the end. Grated romano or asiago works well.

 

2 cups Arborio Rice

4 cups water (or chicken stock)

1 medium onion diced

5 celery stalks diced

2 cloves fresh garlic chopped fine

2# asparagus (snap off tough stems and slice remaining spears on an angle)

1 sweet red pepper diced

1 yellow pepper diced

1 bag frozen peas rinsed in warm water

 

In small pot bring 4 cups water (or stock) to a gentle boil. Lower heat.

 

At same time, in a medium size pot sauté onion, garlic, & celery in enough olive oil to thinly coat the bottom of pot. When vegetables are slightly wilted add the 2 cups of Arborio rice.  Lower heat and stir until rice is blended with the other ingredients.

 

Add ½ cup white wine or mirin. Stir again being careful not to burn the rice. Slowly add the boiling water/stock to the mixture. Cover pot and simmer on low heat. Stir occasionally. When all liquid is absorbed turn off heat and let sit for 5 – 10 minutes.

 

In a small sauté pan sauté red and yellow peppers in a little olive oil until tender. Remove from pan & set aside. In same pan gently sauté asparagus for a few minutes until color is bright green. Remove from heat. Add peppers, peas, and asparagus to rice mixture, salt and pepper to taste.
